Falafel - easy to spell
Not so easy to make.
(Yes, we are in the middle of production for the Jan/Feb issue (out on Jan 18th) but as a little sideproject we decided to make some falafel and couscous and salad and hummus and delicious pita for dinner last nite.)
they seem easy to make.... I mean, it's fucking chickpeas, garlic and onion in a blender with some cumin and coriander in a blender.
anyways, once you blend everything, you mix in some of that white baking stuff... then add some breadcrumbs... roll'em into little balls, flatten them out a little... then fry them in veggie oil.
but ... apparently, there's some secret. It might be coating them in some sort of mixture....
anyways, by about the 13th one, we figured it out... made about 24 and then things started to go downhill again, so we decided 24 falafel were enough.
the couscous was another story.

my tip is to just buy some. or call a middle eastern friend to come over and do it.
It's not even that easy to spell!
It can either be spelled falafel, or felafel (though firefox doesn't seem cool with that spelling. But then, firefox isn't even cool with the spelling of firefox...).
